10 years already… It took more than a decade to build all the services that make up this new version of our online cellar manager. The original aim has not changed: to give every wine lover, whatever their level, the most precise information and tracking tools for managing a wine cellar well.

It is not unusual for a wine lover to keep their bottles in several places: an ageing cabinet and a serving cabinet, an underground cellar, a fridge… Delacavoverre takes the characteristics of each of your cellars into account, while bringing everything they hold together as a single whole for certain services and for your cellar statistics.

Development was built around three major strands, designed to be enjoyable and entirely interdependent — to reveal, or reawaken, the wine merchant and the sommelier in you!

When choosing a wine to match a dish, the first instinct is often to reach for a familiar bottle you know will do the job: this red for meat or cheese, this white for fish, something light as an aperitif… But what about the other wines that might have suited it better? Delacavoverre offers another way: trust the people who made the wines, who will often take you towards pairings far removed from received wisdom.

That is why delacavoverre.com gives free access to any winemaker who wants it, so that they can present a description of each of their wines and of the dishes that go with them.

The crucial question: "when should I drink it?"

Before asking when to open a bottle, the right question is: where is it kept?

Before selling you a wine, the winemaker or merchant will present it and, if it is meant to be kept, will tell you when to drink it: the year to open it and, above all, how long it will keep. The catch is that this ageing potential assumes a very good cellar. Not every type of storage offers the same keeping conditions.

For keeping wine, from best to least suitable:

underground cellar or ageing cabinet >> serving cabinet >> fridge >> storeroom >>> on the kitchen table.

It is worth being clear about this: bottles kept in the least suitable places will never reach the full potential — aromas, ageing — that they would have developed in a true underground cellar or an ageing cabinet.

To each their own. Chasing a wine's peak may be the holy grail for anyone holding bottles with real ageing potential, but the type of cellar is only part of it: the moment, the setting, the company, the time of year, your health, the dish, the style of wine and everyone's own taste all have their say. It should not become an obsession — which is why delacavoverre suggests, for each type of cellar, the right windows in which to open each of your wines.

Two pitfalls to avoid, among others, for any enthusiast

Overconfidence is a classic trap: you are sure you know your inventory by heart, and that is precisely how you end up finding a bottle so far past its best that you no longer dare open it.

Watch out too for a lack of variety, so that you can meet any occasion. Ah, the great vintages! It is hard not to fill your space with the same vintage of the same wine — at the risk of having to drink it all over the same period, and bitterly regretting not having varied the pleasures.
